These homemade burgers are really delicious and so much healthier as there’s no bun. The sweet potato fries are a delicious alternative to potato fries, you’ll never miss potato fries again!

Serves 2

Ingredients


250 grams Minced Beef

1/2 Onion, finely chopped

1/2 tbsp Dijon Mustard

2 tbsp Olive Oil

2 tsp Mayonnaise

Sea Salt

Black Pepper

2 Sweet Potatoes

2 tbsp American mustard

2 tbsp gherkins, sliced

Bunch of fresh Coriander, finely chopped

Directions


Step 1.
Preheat the oven to 200 degrees C/400 degrees F.
Step 2.
Add the minced beef, chopped onion, chopped coriander, and dijon mustard in a large bowl. Season with sea salt and freshly ground black pepper, and stir to combine well. Using your hands, shape into 4 roughly equal-sized patties. Place the patties on a plate, cover with cling film and refrigerate while you make the sweet potato fries.
Step 3.
Chop the sweet potato into long thin fries. No need to peel the sweet potato (the skin has very good nutrients in it!) Put the sweet potato fries in a roasting tray, making sure they are not too crowded on the tray. Add 1 tablespoon of olive oil and toss to coat evenly in the oil.
Step 4.
Season with sea salt and freshly ground black pepper and roast in the preheated oven for 35-40 minutes or until the edges are turning brown.
Step 5.
When the sweet potato fries are about 10 minutes from being done, heat a non stick frying pan over a medium high heat. Remove the burgers from the fridge and rub them with a tablespoon of olive oil. Place the burgers on the hot pan and cook for about 5 minutes each side until cooked through.
Step 6.
When done, spread some american mustard and small amount of homemade mayonnaise on the burgers and top with sliced gherkins. Serve with the sweet potato fries and tuck in!
